I cut them up into cubed chunks, or a whole fillet if they are small

Mix up a bowl of flower, and a little salt/pepper and some louizane fish fry. Prolly 70% flower. Put the fish and seasoning in a closed bowl and shake it up to cover the fish. Take them out and let them sit about 15 min...

Then I have another bowl mixed with, fish fry, flower, some break crumps, salt/pepper, a little slap ya mamma, and maybe some Italian seasoning. Drag the fish through an eggwash and then into the olive oil. I like the olive oil about a 1/4" in pan and then flip the fish over once each side is done

Works good for deer too, but sub the fish fry with chicken fry

Salt & pepper filets.
Dredge fliets in flour, set aside.

Heat 1/4 olive oil to medium, drop in 1/4 diced sweet onion until softened (2-3 minutes).

Turn to medium high heat.

Drop fish for 2 minutes, then flip.

Add 1/2 cup white wine and reduce by half.

Add 1/4 cup of chicken stock.
Add zest and juice of 1 lemon w/teaspoon of cappers.

Finish with a little butter to add body and parsley. Serve with pasta or rice or veg of choice.
