I eat a lot of fish throughout the year. Probably more than most. Just how I grew up I guess, but if I don’t get it atleast once a week I get grouchy. Cook em up all kinds of ways to keep from burning myself out. Would say my top 4 fav are....

1.) standard cornmeal battered fried
2.) tempura battered crappie tacos
3.) put crappie filets in bowl, coat in sour cream, then toss in seasoned flour and fry. Sounds awful but dang it’s good.
4.) tortilla, cilantro, lime crusted baked crappie

Lessons learned.....
When frying maintaining 365-370 degrees is where the magic happens

If using only one fry pot, cook taters first

Keep fish dry and only put in the batter mix right b4 going in the grease

When doing a big fish fry, throw a whole dang onion in your grease pot and leave it! Will keep the grease your from burning

And finally..... the only thing better than 1 crappie dinner is 2 crappie dinners!

All smaller fish I season with salt and pepper and toss in Andy’s red breading and deep fry til it floats and it’s the color I like. I prefer the lightest and thinnest cornmeal breading I can find. Doesn’t get super crispy but you can taste the fish. Beer batter is too much of a hassle for me.

Bigger fillets go in the oven if I’m feeling it. Otherwise I cut them into smaller chunks and fry.

Keep fish as simple as possible. As long as you took care of it, fresh fish is fantastic

I may have to try those recipes out. Sounds really good. Do you use peanut oil to fry with?

When I’m doing a big fish fry I use the peanut oil. But for everyday frying I stick with the cheap stuff.

On my lake they must me at least 10” to keep. Most the ones I caught today were in the 13-14 inch range. Been getting 2 or 3 really good ones each trip in the 15-16.5” range. The first wave of spawners is typically the best as far as size around here. When u get into the tail end of the spawn you gotta sift through lots of dinks.

Was a very nice day today, mid 70s, 5mph South wind. Just one of those days your happy to be a live and fishing. Really wouldn’t have mattered if I caught squat or not. I was truly happy and having fun.

Certainly this doesn’t include me

Seen my good ole friend Mr Beaver making his rounds this morning.

Even caught a few of these guys. I tossed them back, I will come back for the catfish mid May. Also hung a pretty good size bass that broke me off. All in all a great day and I couldn’t be happier. Now I just gotta see if I can talk mama into letting me go tomorrow.....
