Boar meat feedback

On ice for 7 days
Cleaned and vacuum sealed
Defrosted
Slow cooked in seasoning
Braised
Tacos.

It was phenomenal, absolutely worth the field butchering.

All the good ol boys out here said it ain’t worth nothing, to much testosterone, to tough, yada yada yada. Just leave the meat they said.

I agree, found this recipe and made a whole quarter into carnitas, which were amazing:

In my opinion it Depends on the hog. If it smells like really bad like nasty boar hog that been run by the dogs for 2 hours better to leave it. If it doesn't smell rank then eat it. If it stinks it will more then likely smell a little even after its cooked. Not worth the time if they smell. Glad it turned out awesome for you.

It’s exactly like farm raised pork, maybe a bit more dense. Im sure you could do anything to it you would to the other.

Yes exactly. Whenever I made pulled pork with wild hog it wouldn't give gut rot due to all the excess fat. The pigs that I killed also had a "nutty" flavor, perhaps from all the acorns they ate in that general area.

Wild Boar IMO tastes way, way better than store bought. May be different if you buy real high quality from a butcher or something but I can’t speak for that. Like Muddy said all that fat/grease always bothers my stomach.

Like Tribute80 mentioned every once in a while you will run into a nasty stinky hog, even some sows. I assume they maybe are just unhealthy. Idk. But idc how long you age it or marinade it that meat is rank.

I love wild hog. The smaller boars are better and I did kill one once that stunk so bad I literally couldn’t get near him - only one I ever left and I’ve killed a pile. The only one I ever cooked that wasn’t any good was a really old boar. His molars were really worn down - he had a great flavor while you were chewing on it but you had to spit it out because the piece got bigger as you chewed! 1 100 pounder is pretty dang good!

Every wild hog I have had was good. First time we smoked it next to a store bought one in case the wild one was nasty. Other than color you couldn't tell the difference. The wild meat was a little darker.

Like Tribute and PK said, if it’s stinking I don’t mess with it. Had some little boars that were stinking a little one time that we tried to make smoked sausage out of. You could smell that rank hog smell everytime we cooked it. Threw every bit of that sausage out, never again.
